ABOUT Carrot Barfi RECIPE

Here the secret ingredient is khoya. You can serve it in your christmas party at home.

Ingredients Serving: 10

  1. Grated Carrot- 1 kg
  2. Sugar- 400 gram
  3. Condensed milk- 1 cup
  4. Grated khoya- 1 cup
  5. Ghee- 5 tbsp
  6. Cardamom powder- 2 tbsp
  7. Saffron- few strands
  8. For garnishing,
  9. Grated almonds- 2 tbsp
  10. Grated pistachios- 2 tbsp

Instructions

  1. Take ghee in a heavy bottom pan and allow it to heat.
  2. Add grated carrot. Saute for 15 minutes in medium heat. Let it soft.
  3. When it gets soft, add sugar. Let sugar melt. Stir continuously.
  4. Take condensed milk, grated khoya in a bowl. Mix it well. Keep it aside.
  5. Now add this mixture of condensed milk and khoya in the pan.
  6. Mix it well and cook it until it starts to leave the pan.
  7. Then add saffron and cardamom powder.
  8. Switch off the flame and transfer it into flat plate which have little height. Plate should be lined with butter paper so that you can easily demould the sweets.
  9. Flatten the upper surface with a spatula.
  10. Let it cool and then cut into Barfi shape.
  11. Now mix the chopped almonds & pistachio nuts for garnishing. Keep it aside.
  12. Garnish the sweets with chopped nuts.
  13. It's a perfect dessert for your home party.
