ABOUT Baked Mini Cheesecake Cupcakes... RECIPE

The cute looking little bites that actually are customizable. The best part is that they can be served plain or with fruits or even any dripping sauces. Super easy to make and the perfect portion size, these are great for any party.

Ingredients Serving: 8

  1. Graham crackers or digestive biscuits crumb 1 cup
  2. Melted butter 4 tbsp
  3. Cream cheese 180 gm
  4. Granulated sugar 1/4 cup
  5. Lemon juice 1 tbsp
  6. Vanilla essence 1 tbsp
  7. Eggs 2 at room temperature
  8. Kiwi slices for the topping 1 cup

Instructions

  1. Preheat the oven on 180°.
  2. Add melted butter to the biscuit crumbs and mix until it resembles wet sand.
  3. Spoon this mix into the paperliners in the muffin pan.
  4. Press it down firmly with the back of a spoon.
  5. Bake it for about 4 to 5 minutes and allow to cool.
  6. Beat softened cream cheese and sugar with vanilla and lemon juice.
  7. Whisk 2 eggs into this and mix well.
  8. Divide this equally among all the paperliners.
  9. Bake these for about 20 to 22 minutes until a golden crust is seen on top.
  10. It smells heavenly when done.
  11. Serve these chilled with sliced kiwis or whipped cream topping or any dripping sauce of choice.
