ABOUT Olivier Salad/Russian Salad (Vegetarian Version)... RECIPE

A popular salad that adorns every dining table. Gorgeous and presentable. Over the years there have been many variations of this beautiful looking salad. Originally it has hard boiled eggs, boiled chicken or meat with the par boiled veggies. This is a simple vegetarian version of it that is equally delicious and looks tempting too. The addition of pineapple cubes adds a tangy flavour to it.

Ingredients Serving: 8

  1. Potatoes boiled and diced 2 cups
  2. Green peas boiled 1/2 cup
  3. Carrot diced 1/2 cup
  4. French beans chopped 1/2 cup
  5. Pineapple cubes 1 cup
  6. Lettuce thinly shredded 1/2 cup (optional)
  7. Cucumbers cubed 1 cup
  8. Spring onions chopped thinly 1/2 cup
  9. Blackpepper powder 1 tsp
  10. Fresh cream 1 cup
  11. Mayonnaise 1/2 cup
  12. Sugar 1 tbsp

Instructions

  1. Boil potatoes , french beans and green peas.
  2. Do not over boil them.
  3. Dice all the veggies equally.
  4. In a big mixing bowl, add cream and mayonnaise along with sugar and pepper.
  5. Now add the veggies one by one.
  6. Give all a good mix and chill in the refrigerator.
  7. It tastes good when served chilled.
  8. You can omit any veggie if desired. I added lettuce for the crunch.
  9. Serve this salad on a toasted bread alongside a lentil soup or any soup of your choice. This combo is just heavenly.
