ABOUT Mushroom kurma RECIPE

This is a simple kurma with button mushrooms in a creamy coconut  gravy which can be easily done within 20 minutes.This kurma goes very well with dosa, chapathi and poori. You can customise this kurma according to your taste preference..If you want to add any extra vegetables, you can add cooked green peas or sweet corn kernels.

Ingredients Serving: 4

  1. 10 to 12 button mushrooms
  2. 1 Onion, thinly sliced
  3. 2 tomatoes, thinly sliced
  4. 1 green chilly, slit length wise
  5. 2 tsp Ginger garlic paste
  6. 1.5 tsp chilly powder
  7. 1.5 tsp garamasala powder
  8. 1/4 tsp turmeric powder
  9. 2 CInnamon
  10. 2 cloves
  11. few curry leaves
  12. Few coriander leaves
  13. 4 mint leaves
  14. For coconut paste
  15. 7 tbsp grated coconut
  16. 1 tbsp fried grams
  17. 1 tsp Fennel seeds

Instructions

  1. Heat oil in a kadai and add the cinnamon and cloves. Then add the onions.
  2. When the onions turn golden brown in colour, add the green chilly and ginger garlic paste.
  3. Next, add the sliced mushrooms and curry leaves. Stir and saute them well.
  4. When the mushrooms are lightly cooked, add in the tomatoes. Saute for about 3 minutes.
  5. Grind the coconut, fried grams and fennel seeds smoothly.
  6. Add the ground coconut paste. Give it another stir and add 1 to 1.5 cups water. 
  7. Add the required salt, turmeric powder, red chilly powder and garam masala powder. Mix them well and then simmer for about 7 minutes.
  8. When the kurma boils well, turn off the heat and add the chopped coriander leaves and mint leaves.
  9. Close it with the lid for few minutes and then serve it with chapathi, parotta or dosa.
