Ingredients Serving: 3

  1. 1 bunch of spinach
  2. Egg plant 1
  3. 1 teaspoon sugar
  4. salt to taste
  5. Mustard oil 2 tbsp
  6. black cumin 1/2 teaspoon.
  7. Mustard paste 2 teaspoon
  8. green chili 1-2, chopped
  9. red chili 1
  10. Chana dal 1 tsp
  11. turmeric powder 1/2 teaspoon

Instructions

  1. Heat oil in a pan. Add chana dal and saute till golden brown.
  2. keep the dal aside. Chop egg plants into smaller chunks and stir fry in same pan and keep it aside
  3. In same pan, add black cumin seeds and red chili. Saute for few seconds. Add chopped spinach and green chili.
  4. Add salt and turmeric powder. Mix well, saute until spinach wilts
  5. Now add mustard paste, and mix well. Add fried egg plant, dal, sugar and mix well
  6. Cook for 2-3 minutes. Serve hot with rice
