Ingredients Serving: 2

  1. 1 big size Brinjal (about 300 grams)
  2. 1/2 cup blanched spinach puree
  3. 1/2 cup chopped onions
  4. 1/2 cup Chopped tomatoes
  5. 1/4 cup chopped coriander
  6. 3 tablespoon chopped spring garlic
  7. 1 teaspoon salt
  8. 1/4 teaspoon turmeric powder
  9. 1 tablespoon cumin coriander powder
  10. 1 teaspoon kitchen king masala
  11. 2 tablespoon oil
  12. 1 tablespoon ghee
  13. 1/2 teaspoon mustard seeds
  14. 1/4 teaspoon Hing
  15. 2 tablespoon ginger,chilly,garlic paste

Instructions

  1. Roast the Brinjals on direct flame till soft, peel the skin
  2. Mash the brinjal well. Keep it aside
  3. Heat oil and ghee in a pan
  4. Splutter mustard seeds. Add hing and mix well
  5. Add ginger,chilly,garlic and saute for 2 minutes
  6. Add chopped onions and saute for 3-4 minutes
  7. Add tomatoes and spice powders. Mix well. Cook until tomatoes are tender
  8. Add roasted mashed brinjal and cook for 2 minutes
  9. Add salt, spinach puree, spring onion. Mix well. Cook for 3-4 minutes
  10. Serve warm
