Heat 1 tbsp oil in a pan. Splutter mustard seeds and cumin seeds. Add curry leaves and saute for few seconds
Now add the white part of spring onions. Fry it for a minute and then add the green part of chopped spring onions. Mix well
Add salt, chili powder and saute for 2 minutes
Add eggs and stir fry for 4-5 minutes. Serve warm
