ABOUT Turai (Ridge-gourd) Sabzi RECIPE

This vegetable is a Sindhi recipe with a little modification. This is a very light yet tasty dish enjoyed by all age groups. The vegetable is cooked with its own water content, no extra water is added during its cooking. This dish is packed with minerals. It is a recommended dish for ladies in their postnatal phase. The wee dollop of ghee added towards the end of the cooking process enhances its flavour.

Ingredients Serving: 4

  1. Ridge gourds (Toorai) 2 kg peeled and chopped
  2. Onion 1 small chopped (optional)
  3. Turmeric powder 1/4 tsp
  4. Coriander powder 1 tsp
  5. Green chilies 2 chopped
  6. Salt to taste
  7. Garam masala 1/4 tsp
  8. Black pepper 1/4 tsp
  9. Green cardamoms 15 crushed
  10. 2-3 tbsp oil
  11. Ghee 1 tbsp
  12. 2-3 tbsp chopped coriander

Instructions

  1. Heat oil in a pan, Add three fourth quantity of crushed cardamoms.
  2. Add chopped onions and saute for a minute
  3. Add chopped ridge gourds, salt, turmeric, coriander powder and chilies
  4. Cook on medium flame for around 20 minutes or so till water dries up
  5. Now reduce flame, sprinkle remaining crushed cardamom , black pepper powder,garam masala and coriander leaves
  6. Add in ghee,Cook for 15 minutes on low flame till oil oozes from its sides.
  7. Serve hot with rotis
