Ingredients Serving: 6

  1. For the stuffing :
  2. Onion (chopped) - 1
  3. Carrots (chopped) - 1/2 cup
  4. Beans (chopped) - 1/2 cup
  5. Spring onions (chopped) - 1/4 th cup
  6. Bell peppers (chopped) - 1/4 th cup
  7. Chopped garlic - 1 tbsp
  8. Chopped ginger - 1/2 tbsp
  9. Chopped green chillies - 1 tbsp
  10. PEPPER powder - 1/2 tsp
  11. Ajinamoto (optional) - 1/4 th tsp
  12. Salt
  13. Refined oil
  14. For outer covering :
  15. Eggs - 2
  16. Maida - 1 cup
  17. Salt
  18. Water
  19. Bread crumbs
  20. Egg whites

Instructions

  1. Heat a pan with little oil, once heated add chopped garlic, ginger and green chillies.
  2. Once they smell, add the chopped onion and saute till translucent.
  3. Then add the carrots and beans along with some salt. Cook till almost done.
  4. Then add the chopped bell peppers, spring onions. Add pepper powder and ajinamoto and cook till the mixture is dry.
  5. To make the outer covering, whisk the Eggs, with little salt. Mix in the Maida and required amount of water to make a batter like dosa.
  6. Now heat a non stick pan, put a ladle of the Maida batter like a dosa. Once it is cooked, remove it from heat onto the work table.
  7. Put a spoon of the vegetable mixture and fold it as shown in the picture.
  8. Whisk the egg whites, dip the spring roll in them and coat with bread crumbs.
  9. Deep fry these in hot oil. Serve.
