Tangy, spicy and sour. My innovative idea for the people who love this fruit. Perfect main dish to enjoy with family and friends. Very simple yet elegant dish by using one of the most widely loved fruit for it's nutritional value and taste both. An apple a day might not keep the doctor away, but you might never take a chance to miss this delicious pilaf at any cost.

Ingredients Serving: 6

  1. Basmati rice or any good quality rice 4 cups
  2. Green apples 6 to 7
  3. Oil 1/4 th cup
  4. Ghee 1/4 th cup
  5. Salt to taste
  6. Ginger Garlic paste 2 tbsp
  7. Green cardamom pods 5
  8. Star anise 2
  9. Cloves 6 to 7
  10. Cinnamon sticks 4
  11. Bay leaves 3
  12. Garam masala powder 1 tsp
  13. Caraway seeds 1 tsp
  14. Onions sliced 3
  15. roasted cumin powder 1 tbsp
  16. Roasted coriander powder 1 tbsp
  17. Spring onions chopped finely 1 cup
  18. Raisins 1/2 Cup
  19. Coriander leaves chopped 1/2 cup
  20. Vegetable stock 8 cups
  21. Mixed dry fruits like almonds or cashewnuts 1/2 cup (optional)

Instructions

  1. Soak rice for 15 minutes at first.
  2. Cook it al dente in about 8 cups of vegetable stock.
  3. I have taken 2 cups of stock to one cup of rice. You can take it accordingly as required.
  4. Apples should be cored and cubed into medium sized pieces.
  5. In a cooking pot, add ghee and oil both.
  6. Now add the whole spices and finally the sliced onions.
  7. Saute the onions until done. Now add the spring onions too.
  8. Saute it for a minute and then add the powdered spices followed by the green apple cubes.
  9. Adjust salt according to taste.
  10. Saute these lightly for about 4 to 6 minutes on a low flame. Keep it covered.
  11. Apples will be tender and soft in about 4 to 5 minutes but do not over cook them.
  12. Roast raisins and nuts in ghee before garnishing if desired.
  13. Serve hot with any choice of curry garnished with coriander leaves.
