Ingredients Serving: 6

  1. Unsalted butter, chopped 75 grams
  2. White chocolate, roughly chopped 300 grams
  3. Eggs 3
  4. Castor sugar 90 grams
  5. Vanilla extract 2 teaspoons
  6. Self-raising flour 1 1/3 cups (200 grams)
  7. Slivered almonds, roughly chopped 100 grams
  8. White chocolate chips 100 grams

Instructions

  1. Preheat oven to 175°C. Lightly grease a 20cm x 30cm lamington pan and line base and 2 long sides with baking paper.
  2. Melt the butter and chopped chocolate in a heatproof bowl set over a saucepan of barely simmering water over low heat (don't let bowl touch water).
  3. Whisk the eggs, caster sugar and vanilla extract in a bowl. Stir in the melted chocolate mixture, then fold in the self-raising flour. Stir in the chopped almonds and white chocolate chips.
  4. Scrape the mixture into the prepared pan and spread to the edges. Place in the oven and bake for 20-25 minutes until top has a firm crust. Cool in the pan, then cut into 15 squares. Dust with icing sugar to serve.
