Lamington is traditional australian dessert with chocolate and dessicated coconut coating . I have given twust by adding different flavour of lemon and mint

Ingredients Serving: 6

  1. For lemon sponge
  2. Flour 1 cup
  3. Powdered sugar 3/4 cup
  4. Butter + 2 tablespoon oil
  5. Lemon zest 1 teaspoon
  6. Lemon juice 2 teaspoon
  7. Eggs 3
  8. Few drops of lemon yellow colour
  9. Baking powder 1 teaspoon
  10. For lemon and mint butter cream
  11. Icing sugar 1 cup
  12. Butter1/2 cup
  13. Lemon juice 1 1/2 teaspoon
  14. Few drops of mint juice or essence
  15. For soaking
  16. Sugar Syrup made by dissolving 2 teaspoon sugar in 1/2 cup water
  17. For coating
  18. Dessicated coconut 1 cup

Instructions

  1. Foreign sponge
  2. Cream butter oil and sugar(reserve 2 tablespoon)
  3. To this add lemon zest and beat till sugar is completely dissolved
  4. Add lemon juice , lemon color and flour and baking powder to it and mix well
  5. In another bowl separate egg white and egg yolk .
  6. Add egg yolk to sugar butter mixture and beat well
  7. Now with clean blender blade beat egg white with reserved sugar till soft peaks forms
  8. Now fold egg white in flour mixture gently
  9. Grease a square baking tin and pour the batter in it
  10. Bake in a preheated oven at 180 degree for 30-35 mins or till skewer comes out clean
  11. For lemon and mint butter cream beat all the ingredients till it becomes fluffy
  12. After lemon sponge is cooked slice in two parts.
  13. Soak it with sugar syrup. Frost cake with lemon butter cream
  14. Coat completely with dessicated coconut
  15. Cut in pieces and serve
