Ingredients Serving: 10

  1. All purpose flour 100 grams
  2. Castor sugar 75 grams
  3. organic eggs 2
  4. Bananas pureed 2
  5. Carrot pureed 1
  6. Baking powder 2 tablespoon
  7. Butter 100 grams
  8. For Glaze:-Pomegranate kernels 1 cup +2 tablespoon
  9. Pomegranate juice 2 cups
  10. Sugar 1/2cup
  11. Pistachios broken 1 cup

Instructions

  1. Cream butter ,sugar ,bananas ,carrot and eggs together with hand blender.
  2. Mix flour and baking powder in a separate bowl properly.
  3. Add flour gradually to the egg ,butter mixture.
  4. Line a loaf tin with butter paper and pour this solution over that.
  5. And bake this loaf for 35 minutes on 175 degrees.
  6. Till your loaf gets ready ,boil pomegranate kernels and juice together for 5 minutes.
  7. Add 1/2cup sugar to it and let it boil for 10 minutes on simmer heat.
  8. Now strain this syrup and let it cool to normal temperature.
  9. Get your loaf out of oven and cooled over rack
  10. Mix icing sugar with pomegranate syrup to make icing and mix properly.
  11. Pour this icing over the loaf and decorate with pomegranate kernels and pistachios.
  12. I assure you that your diwali guests would never forget to ask this recipe.
