Ingredients Serving: 6

  1. Plain Flour - 500g
  2. Melted Butter (unsalted) -1/4 cup
  3. Powdered Sugar - 1/4 cup
  4. Eggs - 4
  5. Grape essence -3/4 tsp
  6. Salt - a Pinch
  7. Zest of 1 lemon
  8. Water - 1 to 2 tablespoon ( as required)
  9. Sunflower oil - as required for deep frying
  10. Honey - 500g

Instructions

  1. Lightly beat butter and sugar together. Add this to the flour placed in a wide bowl. Add in the eggs, salt, lemon zest, essence to the flour mixture and mix well.
  2. Transfer the mixture to your kitchen counter top. Knead well with your hands. Add 1 or 2 tablespoon of water if required to form a soft non sticky dough. It is important to knead for 5 to 6 minutes.
  3. Cover the dough with a cling wrap and pop it in the fridge for half an hour.
  4. Take the dough out after half an hour, remove the cling wrap. Dust the counter top with flour and roll the dough a bit flat.
  5. Cut into five or six portions and roll each one to look like a sausage or rope about 1 cm thick.
  6. Cut each rope into pellets. Heat oil for deep frying the pellets.
  7. Drop a pellet if it sizzles immediately then the oil is ready for frying. Deep fry the pellets in batches in medium low flame(each batch for 2 to 3 mins).
  8. Drain the pellets in tissue paper.
  9. Heat honey in a large pan just for a minute till it reaches dripping consistency. Toss in the pellets and mix well with the honey. Switch off the flame.
  10. Oil the rim of a glass and place it in the center of a large plate and mound the honeyed nuggets around the glass so that it looks like a ring.
  11. Place it in the fridge for 3 hours. Take it out from the fridge half an hour before serving and remove the glass. Your Cicerchiata is ready to serve!.
