At tea time we all need some savoury munching snack so made this minty besan bhujiyea at home which is more hygenic then store bought

Ingredients Serving: 6

  1. Chickpeas flour /besan -1cup
  2. Boiled mashed potatoes -3-4
  3. Turmeric powder -1/2tsp
  4. Red chilly powder -1/2tsp
  5. Pinch of asafoetida
  6. Black salt -1tsp
  7. Aamchur powder -1/2tsp
  8. Chat masala -1tsp
  9. Mint leaves
  10. Green chillies
  11. Ginger -1/2"
  12. Oil for frying
  13. Oil for kneading dough -1tsp
  14. Sev making machine /murruku making machine with medium size jaali

Instructions

  1. In a bowl mash boiled potatoes .
  2. Add chickpeas flour.
  3. Add turmeric powder.
  4. Add Pinch of asafetida
  5. Add black salt.
  6. Add aamchur or aannarda powder.
  7. Add red chilly powder.
  8. Finely grind green chillies few mint leaves and ginger .
  9. Add this paste in chickpeas flour .
  10. Combine the mixture and make a firm dough by adding few drops of oil .
  11. Knead it well cover it and let it rest for 10 minutes.
  12. Dry roast some mint leaves.
  13. Heat oil in a wok.
  14. Grease sev machine/kitchen press with oil so that dough doesn't stick to the sides.
  15. Make two portions of the dough.
  16. Attach medium holes jaali to sev machine.
  17. Press the handle of the machine in the hot oil sev comes out.
  18. Fry bhujiyea sev from both sides till light golden brown.
  19. Keep adjusting flame while frying sev .
  20. Take out on absorbent paper .
  21. Crush sev lightly with hands.
  22. Sprinkle chaat masala ,lil black salt .
  23. Crush some dry roasted mint leaves .
  24. Spicy minty bikaneri sev is ready to munch .
  25. Serve in a bowl garnish with mint twig.
  26. Enjoy with hot cuppa of tea .
  27. Store in an airtight container as becomes soggy in monsoon season.
