Crispy Spicy Cajun Baby Potatoes make a perfect delectable starter full of flavours and crunch. They are crispy outside and luscious inside.

Ingredients Serving: 2

  1. 250 gms or 10 - 12 Baby Potatoes
  2. 1/2 Cup Thousand Island Dressing or eggless mayonnaise.
  3. 2 tsp Sprig Syracuse 7 in one multipurpose spice blend
  4. 1 tbsp finely chopped onions
  5. 1/2 teaspoon lemon juice
  6. 1/2 tsp red chilli powder or as per the taste
  7. Salt to taste
  8. Olive Oil for shallow frying
  9. For the Garnish
  10. 1/2 teaspoon chilli flakes
  11. 1 teaspoon cilantro leaves

Instructions

  1. Making the Dip for the Cajun Potatoes
  2. Mix together the eggless mayonnaise Sprig Syracuse 7 in one multipurpose spice blend, lemon juice, chopped onions, Pepper, and Salt in a mixing bowl and keep aside.
  3. Sprig Syracuse spice blend
  4. Preparing the baby Potatoes
  5. Scrub the baby potatoes and wash them thoroughly to get rid of any dirt.
  6. Boil or pressure cook the baby potatoes (with skin) in salted water till just tender or 3/4th done.
  7. Let the potatoes cool down
  8. Now using a heavy spoon or your palms, squash each baby potato till the skin just splits.
  9. In a shallow pan, heat about 2 teaspoons of olive oil
  10. Shallow fry the baby potatoes 5-6 at a time turning them occasionally until they become golden and crisp on all sides.
  11. Take out on a plate with a slotted spoon, to drain all excess oil.
  12. Arrange the baby potatoes in a plate
  13. Now drizzle generous amount of prepared spicy sprig sauce or dip on each potato,
  14. Sprinkle chilli flakes, garnish with cilantro and serve immediately.
  15. Enjoy endlessly.
