This is a perfect sunday lunch, made with eggs and capsicum.
Wowww...
Take a capsicum. Cut it into a circle form. Deseed it. Keep that in a bowl.
Now with the help of your fingers, apply little salt on the sides of capsicum (inner side of the capsicum).
Now repeat the step with red chilli powder for the inner side of the capsicum. Let it rest for 5 minutes.
In another bowl add chopped onions, very little capsicum, salt and red chilli powder.
To this break one egg.
Add in coriander leaves finely chopped.
Whisk it until frothy.
Heat a pan on medium flame. Add oil (may be 2 - 3 teaspoon). Once the oil is heated lower the flame. Fully low.
Now gently place the capsicum ring in the centre. Be careful oil might splutter.
Allow it to fry in oil for couple of minutes. Now flip it gently.
Now add the beaten egg mixture in the centre of the ring. Once the ring is filled with egg, it oozes out to the sides. (if you want egg only in the centre then pour little egg mixture just enough to fill the capsicum ring).
Cook on a low flame. Until the other side of capsicum is cooked. (Remember we just cooked one side of capsicum ring. Other side will cook with egg).
Gently flip the omelette.(If half boiled is loved, you need not flip).
Just cook little. Make sure the centre is gooey enough.
Serve it hot with ketchup or just dive in.
