Ingredients Serving: 2

  1. Cauliflower florets 3/4th cup
  2. Water 2.5 cups
  3. Saunf, crushed 1 tsp
  4. Bay leaf 1
  5. Salt and pepper as required
  6. Thyme leaves 1/8 tsp
  7. White butter 1/4 cup
  8. Maida 1/4 cup
  9. Mustard paste 1 tsp
  10. Oregano, red chilli flakes as required
  11. Basil, 4-5 leaves
  12. Pineapple, canned, 2-3 slices
  13. Bread, 4-5 slices
  14. Cheese, 50 g, grated

Instructions

  1. Boil 2.5 cups of water and add saunf, bay leaves, and thyme to it
  2. Add cauliflower florets to it and let it boil till they are soft and cooked completely
  3. Drain cauliflower and keep aside. Keep the stock.
  4. In another pan, melt butter and add all purpose flour or Maida to it stirring constantly. Do this till the mixture becomes dough like and slightly starts to stick to pan.
  5. Turn flame to low, and add the stock kept aside. Stir continuously till no lumps remain. (initially there will be lumps but don't worry).
  6. Add more water if required and let it simmer till it thickens enough to coat back of the spoon
  7. Add mustard, salt, pepper, chilli flakes, oregano
  8. Finely chop the cooked cauliflower and add to this mixture
  9. Toast bread slices in a toaster till crisp and break them into pieces. Add to the mixture above along with chopped pineapple
  10. Add chopped basil
  11. Layer it in a medium square baking tray in a single layer or in mini casseroles
  12. Top with grated cheese
  13. Preheat oven to 180 degrees C and bake for 20 mins and grill for 2-3 mins till cheese on top melts
