These pumpkin bars studded with choco chips are absolutely irresistible. Spiced with the pumpkin pie spice, these blondies stand apart from any Brownies. The pumpkin spice is a beautiful amalgamation of few kitchen spices which enhance and provides the richness to the bars. Learning about the pumpkin pie spice was indeed a new addition to my knowledge of mixed spice. Super soft, moist and full of robust pumpkin flavour. They are dense like a blondie rather than cakey. A one bowl receipe makes it easy to whisk, blend and bake. Plenty of pumpkin pie spice and choco chips are the key ingredients to this recipe. The ingredients mentioned are for a 8 "x4 1/2" pan here. You can always double if you have a bigger pan. A Small batch often gets over with a blink of an eye.

Ingredients Serving: 4

  1. For one cup puree:
  2. 2 small pie pumpkins
  3. (used in this receipe 3/4 cup of the puree)
  4. Dry ingredients :
  5. Flour - 1 1/2 cup
  6. Sugar - 1 1/4 cup
  7. Baking powder - 1/2 tsp
  8. Salt - a pinch
  9. For the pumpkin pie spice : (makes 1 TBSP)
  10. (used 3 tsps In this receipe)
  11. Cinnamon powder - 2 tsps
  12. Cloves powder - 1/4 tsp
  13. Nutmeg powder - 1/4 tsp
  14. Ginger powder - 1/4 tsp
  15. All spice - 1/4 tsp
  16. Wet ingredients :
  17. Oil - 4 tbsps
  18. Butter - 4 tbsps
  19. Egg - 1
  20. Vanila essence - 1 tsp

Instructions

  1. For the pumpkin puree : Wash and cut pumpkins to halves and bake for an hour in a preheated oven at 180 °. Keep the cut side down on a parchment papered tray.
  2. Cool completely before scooping the pulp
  3. Puree it in a mixer.
  4. Make the pumpkin pie spice and keep ready.
  5. Mix it well and seive 3 tsps of the pumpkin pie spice alongwith flour, salt and baking soda.
  6. Now blend and cream the wet ingredients. First the oil, butter and sugar
  7. Then the egg, Vanila essence and 3/4 cup of pumpkin puree
  8. Now add the spiced flour and mix well adding around 1/2 cup of choco chips and leaving 1/4 cup for garnish
  9. Spread evenly on a prepared baking pan. Grease and flour well
  10. Drizzle the remaining choco chips
  11. Now bake in a preheated oven at 160°for 22 to 30 minutes
  12. Check in the last 10 minutes for doneness
