A traditional dish with a twist of honey and flavoured vermicelli. Kids love it...

Ingredients Serving: 4
1 cup Maida/ All purpose flour
Pinch of salt
2 tablespoon ghee
Water to make a dough
Oil for Deep frying
Maida for dusting
5 tablespoon dabur honey
Flavoured vermicelli little
Instructions
In a bowl add maida.
Add salt. Mix well.
Add melted ghee and mix gently. Now add water little by little and start working with your fingers to get the mixture to a soft dough form. (Do not add too much water at once, the dough might become too watery. Add it in batches).
Once the dough is soft, allow it to rest for 30 minutes. This process helps the dough to become crisp enough when you fry.
After 30 minutes, knead the mixture a little bit. Make equal sized balls.
Take 1 ball. Roll it out to a circle form using a rolling pin. Now using a sharp knife cute the edges and give a square shape. Square shape is important.
Step1 - With the help of your fingers, take the pointed edges of the sqaure and fold it inwards. To a form a shape as in the picture below. Make sure you have dusted the rolled out sqaure with maida (do not over dust it. If you forget to dust, then the following steps will be harder for preparing).
Now gently flip the prepared one. Step 2 - now again take the edges and fold it inwards. (Make it for all sides). Here when you fold the first two sides, make sure you pinch the gap between the two folds. In the picture below, two sides are folded. The centre line between the folds, pinch it with your 2 fingers. Repeat for all sides. (Do not give too much pressure).
In the below picture the diagonal lines visible are the pinches. The vertical and horizontal lines are folds of the step1. (Make sure the pinches are sealed. No need to add any water to seal it. Just by pinching it the gap closes.)
Now gently again flip the prepared one. The picture will be like this.
Now slowly open the florets from in to out. Do it for all sides. (If you forget to dust the square in the beginning, you cannot open at this stage. I tried it and experience is speaking).
Now flip the prepared one. You get this shape. Just like a flower.
Repeat the process and make few flowers.
Now in a kadai, heat enough oil for deep frying at a medium flame.
Once the oil is heated, turn the flame to low and fry the prepared flowers. Make sure you do it one at a time. The maida mixture blooms just like a flower. If you add more, then there will be no space for it to fry evenly. Fry until golden brown.
Once it's fried nicely remove it from the kadai and drain out the excess oil.
When the flowers are still hot, drizzle Dabur honey (as per your taste add the amount of honey).
Now add the flavoured vermicelli on top of it and serve.
