The best ice cream in the rains. Fresh whole milk starched with arrowroot powder and sweetened only with honey infused with cloves and lemon rind makes it absolute divine and luscious.

Ingredients Serving: 4
Milk - 2 cups + 1/4 cup
Raw Honey - 1/2 cup
Fresh cream - 1 1/2 cup
Cloves - 5
Lemon rind - of half a lemon
Vanila essence - 1 tsp (optional)
Arrow root powder - 1 tbsp
FOR GARNISH:
Honey glazed nuts - almonds and cashew
Honey comb:
Sugar - 2 tsps
Water - 1 tsp
Baking soda - a pinch
Instructions
Add the cloves and lemon rind to the honey and heat on double boiler for some time
Keep aside. Leave it to cool and rest.
Mix the arrowroot powder with 1/4 cup milk and keep aside
Now Take a vessel add the milk and the infused honey whisk and keep on medium flame
As it bubbles add the arrowroot milk mixture gradually whisking continulously
As the milk thickens put of the flame and let it cool
Now can discard the cloves or keep
Add the cream( and Vanila essence if desired) and use electric beater and beat for few minutes
Freeze the mixture for 4 hours
Beat once with electric beater in between.
Glaze few nuts, cashews and almonds with 2 tsp honey on low to medium flame and keep on parchment paper for garnish
Crush few glazed cashew for garnish
Make honey comb by dissolving sugar with water on gas. When it changes to a dark brown caramel colour add the baking soda and mix to combine.
Pour on a parchment paper and leave it to cool. On cooling break into peices for garnish
