ABOUT Pharali Rajgira Puri RECIPE

In Maharashtra, Rajgira is quite popular and been eaten during fasting. Its rich in calcium, protein, amino acids and is rich in iron, magnesium and Vitamin A, B and C. This Puri is mainly eaten for fasting.

Ingredients Serving: 4

  1. Amaranth or Rajgira flour – 2cups
  2. Potato (Peeled, Boiled and mashed) – 1-2nos (Optional)
  3. salt as per taste
  4. Sugar –1 tsp
  5. Amchur Powder – 1 tsp
  6. Oil - 1tbsp for kneading + 2cups for Frying
  7. Water as required for kneading
  8. For Serving – Coconut Chutney, Roasted Peanut Chutney

Instructions

  1. In a bowl take Rajgira or Amaranth Flour. Add oil, salt, sugar, Amchur Powder, Oil, Mashed potato
  2. Mix all ingredients thoroughly. Adding water slowly at a time knead a bit stiff dough
  3. Keep aside for 20-30 minutes.
  4. Heat oil in a wok or Kadai.
  5. Grease hands with oil. Take small portion of dough and make a ball. Place muslin cloth or cling wrap on rolling board or plate. Grease it with little water or oil. Place a ball and Roll evenly from all the sides. It should be little thick
  6. Fry Puris on medium low flame from all the sides till golden brown
  7. Serve hot with Coconut Chutney or Roasted Peanut Chutney.
