Pefect Mexican Brunch...yummy to relish.. chimichanga is nothing but baked or fried burritos

Ingredients Serving: 4

  1. 4 Tortillas readymade or homemade
  2. For filling:-
  3. 1 cup boiled and mashed kudney beans
  4. 1/2 cup boiled sweet corn
  5. 1 chopped onion
  6. 1 chopped tomato
  7. 1 tsp freshly crushed black pepper
  8. 1 tsp Oregano
  9. Salt to taste

Instructions

  1. Mix everything mentioned for filling in a bowl...check for seasoning...keep aside
  2. Take one tortilla...place the filling in centre...
  3. cover from 4 sides and close the sides with toothpick....
  4. make all in the same way...You can bake or fry...
  5. I shallow fried them on griddle...
  6. it's served with SALSA, SAUCE and SOUR CREAM... I didn't have sour cream so skipped it.
  7. Mix salsa, sauce and dip a piece of chimichanga in that .Enjoy the yummy treat...it's really sumptuous..
