A Sumptuous Chocolate and Coffee Pudding which is simple to prepare. This is a perfect party dessert. Whip this in minutes. This choco mocha pudding is extremely simple to prepare. Cooked up all in one pot, this dessert literally gets ready in a few minutes. The bold and assertive flavors of wonderful cocoa combined with strong coffee is a match made in heaven. Golden Oreos makes a fun garnish. Served with fresh strawberries this dessert is sure to get people talking.

Ingredients Serving: 3

  1. For The Choco Mocha Pudding
  2. powdered sugar 1/2 cup
  3. unsweetened cocoa powder 1.5 tablespoons
  4. instant coffee powder 1.5 + 1/2 tablespoons
  5. corn flour 1/4 cup
  6. Salt 1 pinch
  7. milk, boiled and cooled [refer notes] 2.75 cups
  8. Butter 2 tablespoons
  9. Vanilla extract 1 teaspoon
  10. For The Pudding Base
  11. Any flavor of Plain Sponge Cake [Baked at home or store-bought]
  12. FOR GARNISH
  13. golden oreo cookies, to garnish [You can use any cookie/ biscuit of your choice]
  14. strawberries, to serve

Instructions

  1. To Prepare The Choco Mocha Pudding
  2. Into a sauce pan, add sugar, cocoa powder, instant coffee, corn flour and salt and mix well.
  3. Now add the milk and place it on the stove. Cook the mixture on a gentle sim.
  4. Stir [I used a balloon whisk] continuously to get rid of any lumps.
  5. Cook the mixture till it starts thickening and holds the mark on the back of the spoon.
  6. Remove the pudding mixture from the stove.
  7. Into the hot pudding mixture, add butter and vanilla extract. Combine well till butter has melted.
  8. Pour the hot pudding mixture into a large bowl. Place in the refrigerator to set for about 2 to 3 hours or longer if needed.
  9. To Assemble The Layered Choco Mocha Pudding
  10. Arrange serving glasses or jars. [You could chill it for a few minutes in a refrigerator if you like]
  11. Add crumbled sponge cake as the bottom layer.
  12. Add generous dollops of the choco mocha pudding on top. Fill up the serving glasses/ jars to desired quantity.
  13. Garnish with Golden Oreo cookies.
  14. Serve with fresh strawberries
