tutti frutti bread invokes childhood memories. this is a sweet bread which is loaded with colourfull tutti frutti. tutti frutti bread is perfect accompaniment for tea or coffee. you can have it with tea or jam in your breakfast or brunch.

Ingredients Serving: 5

  1. for tangzhong-
  2. 2 tbsp all purpose flour
  3. 1/4 cup Milk
  4. 1/4 cup water
  5. For dough-
  6. 2 cup all purpose flour
  7. 2 tbsp Sugar
  8. 1 1/2 tsp instant yeast
  9. 1 tsp Salt
  10. 1 1/2 tbsp oil
  11. 2 tbsp milk powder
  12. 3/4 cup warm milk
  13. 2 tbsp tutti frutti
  14. extra milk and butter for brushing

Instructions

  1. for tangzhong-
  2. in a saucepan mix flour, milk and water without any lumps.
  3. cook over low flame untill thick. keep stirring.
  4. remove from heat and let it cool very well.
  5. for dough-
  6. in a bowl mix flour, salt, sugar, milk powder, yeast and mix well.
  7. add roux/tangzhong, milk and knead a dough.
  8. add oil and knead for 10-15 minutes.
  9. oil the dough and cover with cling film. keep this dough in a warm place and let it double in volume.
  10. once doubled gently punch the dough and add tutti frutti.
  11. roll it into a rectangle and roll into a log shape.
  12. place this into a loaf tin and wait for second rise.
  13. preheat the oven at 180c for 10 minutes
  14. take the loaf and brush with milk. bake for 30 minutes at 180c
  15. remove from oven and slightly brush with butter.
  16. keep it on wire rack and allow it to cool for 2-3 hours.
  17. once cooled slice and serve.
