ABOUT Mango Coconut Rice Pudding RECIPE

Awesome creamy and glossy pudding made with mango, rice and coconut milk. You can use normal milk also instead of coconut milk.

Ingredients Serving: 4

  1. 2 Ripe Mango Pulp
  2. 2 cup coconut milk
  3. 2 Cups Water
  4. 2 tbsps sugar
  5. Few drops of vanilla Essence
  6. 1 cup arborio rice
  7. 1/4 Tsp. Cinnamon Powder
  8. Dark Chocolate for Granishing
  9. Mango Cubes for garnishing

Instructions

  1. Boil the water in thick bottom pan, add oil and rice together and cover it. Cook for 15 minutes or till to water absorbs on low flame.
  2. Add coconut milk, vanilla essence, sugar, cinnamon and mix it. Cover and Cook for 5 minutes.
  3. Clean and peel the mangoes and cut into diced. Blend the 3/4 mangoes into mixer till to smooth consistency.
  4. Add the mango pulp, mix it and again cook until water has been absorbed but not hard. It should be creamy and glossy.
  5. Switchoff the gas and keep it on room temperature
  6. Serve in individual bowl and garnish with mango and chocolate chunks. Enjoy!
