ABOUT Pasta Salad RECIPE

I made this pasta and thinking not all my friends like pasta and the sauces that go with it so I made this salad. This salad is inspired by foodnetwork.com

Ingredients Serving: 8

  1. 4 cups shell shaped pasta
  2. ½ cup cauliflower cut into small florets
  3. ĵ cup carrots julienned
  4. ĵ cup mushroom sliced fine
  5. ½ cup mayonnaise
  6. ½ cup buttermilk
  7. 1 tbsp garlic chopped
  8. 1 tbsp parsley
  9. 1 lime Juice
  10. 1 tsp pepper freshly ground
  11. 1 cup processed cheese shredded
  12. 1 small head romaine lettuce sliced
  13. 2 tomatoes diced
  14. 1 tbsp spring onion greens chopped
  15. Salt as per taste

Instructions

  1. In a large pot of boiling salted water. Add the pasta and cook until al dente.
  2. In a thick bottomed kadhai/wok,add the mushrooms and the cauliflower, cover and cook on a low flame for 5 mins. Set aside to cool.
  3. Whisk the mayonnaise, buttermilk, garlic, parsley, half of the lime juice, salt and pepper to taste. Reserve about 3-4. Toss all the ingredients in a large bowl of pasta with the rest of the dressing.
  4. Toss all the ingredients in a large bowl pasta with the rest of the dressing.
  5. Drizzle some of the remaining dressing on top and sprinkle with the spring onion.
  6. Cover and refrigerate the salad and dressing separately up to 6 hours.
  7. Before serving serve slightly chilled.
