Ingredients Serving: 5

  1. 2 cups milk
  2. 1 cup sugar
  3. 1/4 semolina
  4. 1/4 ghee
  5. pistachios
  6. almonds
  7. 1 table spoon cardamom powder
  8. 1 table spoon saffron
  9. 2 drops essence of your choice I used vanilla

Instructions

  1. In thick bottom pan add milk, sugar, semolina, ghee and mix well. Now place it on heat and keep on whisking.
  2. It will get thick. You have to keep on cooking and stirring on medium to high heat.
  3. At one stage you will see the mixture leaves the sides of pan and comes in one big mass around the spoon.
  4. Now add in 1 tablespoon of ghee n essence mix well. This process will take around 30 minutes.
  5. Divide the mixture into two. Spoon one half in a parchment sheet which is lightly greased with ghee.
  6. Here place another sheet of parchment and roll it using a rolling pin till it is thin as per your liking.
  7. Remove the parchment and sprinkle with the nuts mix.
  8. Keep another paper over it and roll with a rolling pin against it so that the nuts stick to the halwa. Put this halwa in fridge for 2-4 hours.
  9. In the remaining half add food colour of your choice and mix well. Repeat the same procedure by using rolling pin. Now cut it into square and arrange it between sheet parchment. Here sweet tasty and mouth watering Bombay halwa is ready to serve.
