ABOUT Paneer Kosha / Slow Cooked Paneer with Caramelized Onions RECIPE

It is a Bengali style recipe , onions are cooked in slow heat until they are caramelized , then tomatoes and other ingredients are added

Ingredients Serving: 4

  1. Paneer blanched(frozen) 400 gms
  2. Onion large 2
  3. Ginger 1/2 inches
  4. Garlic 2 pods
  5. Potato 1 cubed
  6. Tomato 2 small chopped
  7. Green chili 2
  8. Powdered spices :
  9. Turmeric powder 1/2 tsp
  10. Cumin powder 1 tsp
  11. coriander powder 1 tsp
  12. Chilli Powder 1/2 tsp
  13. Garam masala 1/2 tsp
  14. salt as per taste
  15. Oil as required

Instructions

  1. Cot potatoes in cubes
  2. Heat oil in a nonstick won , add onions , cook it in low heat until it is slightly caramelized
  3. Crush ginger and garlic
  4. Add grated ginger and garlic paste
  5. Add cumin , coriander and chilli powder
  6. Add tomatoes and salt
  7. Shallow fry potatoes in another frying pan
  8. Add fried potatoes to the wok also add green chilli
  9. Cover and cook until oil separates from the masala and potatoes are cooked well , add little water
  10. Add garam masala
  11. If you want you can garnish with slit chillis and chopped coriander leaves
  12. Serve hot with rice or roti
