Ingredients Serving: 5

  1. 4 medium brinjals
  2. [Big round variety]
  3. 3 medium onions chopped
  4. 4 big tomatoes chopped
  5. 1 cup fresh chopped coriander leaves
  6. 1 tbsp green chillies chopped
  7. 1 tsp red chilli powder
  8. 2 tbsp coriander powder
  9. Salt to taste
  10. 2 tbsp refined oil
  11. 1 tsp sabut Jeera
  12. 1 tsp jeera powder
  13. 1 tsp garam masala

Instructions

  1. Take the brinjals and roast them, till the skin is totally burnt. After roasting put them in water. Peel the brinjal skin and check
  2. Mash the brinjal and keep aside.
  3. Heat some oil in a pan, add the jeera and let them splutter, followed by the chopped onion. Saute them till golden brown.
  4. Add the chopped tomatoes and saute for 5 minutes
  5. Add red chilli powder, Coriander powder, Salt to taste and jeera powder. Cook on a medium flame.
  6. Once the masala starts leaving oil from the sides, add the mashed brinjals. Cook for 10 more minutes
  7. mix and Cook till it releases oil on sides
  8. Garnish with fresh coriander and green chillies.
