Its a deep fried recipe and hence preferably be made ocassionally only....

Ingredients Serving: 5

  1. Fresh Okra - 1/2 kg
  2. Green Chillies - 2-3
  3. Fresh coriander - finely chopped
  4. Chickpea flour/ began - 3 -4 tbsp
  5. Rice flour - 1-2 tbsp
  6. corn flour - 2 tbsp
  7. Ajwain/Carom - 1/2 tsp
  8. Red chilli flakes/ Kuti Mitch - 1 tsp
  9. Asafoetida/hing - 2 pinches
  10. Salt
  11. Oil for frying

Instructions

  1. Chop Okra into pieces about 1/2 inch size. All should be almost equally cut!
  2. Chop green chillies into very small pieces
  3. Chop coriander.
  4. In a big bowl take cut Okra, cut chillies and chopped coriander.
  5. Add besan, rice flour, corn flour, ajwain, hing, dry chilli flakes and salt as per taste and 2 tspn of oil.
  6. Mix all these ingredients with a spatula or a big Spoon. Do not use water and do not mix with your hands !! keep it aside.
  7. In a deep wok, pour sufficient oil so that you can fry 2 / 3 ladles of okra into it. We will fry them in 3/ 4 portions....not all at once!
  8. Keep the flame in medium and keep stirring ir wet else, some of them may get over-board fried which spoil the taste of the curry.
  9. Now, likewise fry the remaining portion too.
  10. Crispy, crunchy and most delicious Okra is ready to be savour!
