Strawberry Muffins with Straberry sauce

ABOUT Strawberry Muffins with Straberry sauce RECIPE

Simple strawberry flavoured muffins. To make it more yummy i poured some strawberry sauce on it and made my daughter's party unforgettable. All loved these muffins.

Ingredients Serving: 8

  1. All purpose flour / Maida 3/4 cup
  2. Fresh Strawberries 25
  3. Sugar 6 tablespoons
  4. Baking powder 1/2 teaspoon
  5. SODA 1/4 TEASPOON
  6. Pinch of salt
  7. Oil non flavoured 1/4 cup
  8. Vanilla Essencev 1/2 teaspoon
  9. For Sauce
  10. Sugar 4 tablespoons
  11. gelatin powder 1/4 teaspoon(vegetarian can use agar agar)

Instructions

  1. Take all strawberries ,cut into pieces and make a purée in blender.
  2. Strain it ... we will use juice for making strawberry sauce.. and pulp will be used in preparation of muffins.
  3. For sauce ,dissolve gelatin in little water..
  4. Take strawberry juice add sugar, gelatin .
  5. Boil this, with continuous stirring. Your sauce is ready. Let it cool.
  6. For muffins , mix the flour, salt, baking powder and baking soda and sieve this together to ensure even mixing.
  7. Keep this aside. Preheat the oven to 180 degree C.
  8. Grease moulds with oil and set aside.
  9. In a mixing bowl, whisk sugar, oil and vanila essence. Slowly add the sifted flour to it and gently fold the mixture.
  10. Now add strawberry pulp n again fold it gently. Don't overmix or overbeat.
  11. Pour this batter into the greased moulds..
  12. Bake in preheated oven at 180 degree C for 15-20 minutes or till a toothpick inserted into the middle of the muffin comes out clean .
  13. Allow the muffins to cool down for 15 minutes and then demould .
  14. Let it cool completely and while serving pour some strawberry sauce.
  15. For decoration i have used mint leaves and cadbury gems.
