ABOUT Kathrika ( Baigan) and butter beans vathakozhambu RECIPE

A Spicy and yummy brinjal curry to be served with some steamed rice or some rotis.

Ingredients Serving: 2

  1. Tamarind soaked - lemon size
  2. Butter beans - half cup , soaked
  3. Kathrikai- 2 (cut into four pieces)
  4. Salt- to taste
  5. Sambar powder- 2 tbsps
  6. Sesame oil - 4 to 5 tbsps
  7. Turmeric powder - half tsp
  8. Sugar or jaggery - little
  9. Mustard seeds- 1tsp
  10. Broken urad dal- half tsp
  11. Hing powder - little.

Instructions

  1. Soak tamarind for one hour.
  2. Take sesame oil in a kadayi, add mustard seeds when they splutter add broken urad dal, fry well
  3. Add kathrika pieces and soaked butter beans mix and fry well.
  4. Add the powders, sambar powder, salt and turmeric powder, hing powder.
  5. Add the tamarind water boil all these together
  6. Once kathrika and butter beans is boiled in tamarind water and mix well till its thick
  7. Add jaggery and boil till it combines well
  8. Serve with hot rice and ghee.
