Ingredients Serving: 2

  1. A) Spaghetti
  2. Wholewheat Spaghetti 1 pack
  3. .Garlic coarsed: 6-7
  4. Mixed dried herbs: rosemary, basil, parsley
  5. Garlic Herby butter: 20 gms
  6. Water for boiling
  7. B). Fish balls
  8. 400 gms basa or sole fish, wash and towel dried
  9. Salt, Pepper
  10. Fish sauce: 1 tsp
  11. Fish or olive oil: 1 tbsp for binding and 3 tbsp for saute
  12. Fresh cilantro, bell peppers and rosemary
  13. C) Marinana tomato sauce
  14. Cherry tomatoes halved: 10-12
  15. Tomato pulp of deeded and skin removed: 1/2 cup
  16. Handful Chopped cilantro
  17. 2 chopped spring onion
  18. 2 Chopped chives
  19. 3 to 4 twigs parsley
  20. Ginger garlic coarsed: 3 tbsp
  21. fresh basil leaves
  22. Olive oil
  23. Salt, pepper, oregano
  24. Fish seasoning or stock cubes
  25. Sweet chilli sauce
  26. Fine chopped bell peppers: 3 tbsp

Instructions

  1. A. Spaghetti :
  2. In an open pan, boil water with oil, salt and dried herbs.
  3. Add Spaghetti and cook for 8-10 min till done. Don't overcook
  4. Strain and run under cold water.
  5. In a wok, melt garlic Herby butter, add garlic coarsed and toss in Spaghetti with salt and pepper, fresh parsley. Set aside.
  6. B. Fish balls :
  7. In a food processor, add fish pieces, seasonings, oil, herbs and churn coarse.
  8. With greased hands form fish balls. In a pan, add 2 tbsp oil and pan fry the balls.
  9. Once crust forms, cover with lid and let it cook in own steam for 4-5 minutes
  10. Keep aside and add to Marinana sauce later.
  11. C. Marinanara sauce :
  12. In a wok, heat oil. Add ginger garlic, saute, add spring onions, saute.
  13. Add cherry tomatoes. Toss. Add bell pepers and seasonings, oregano.
  14. Add tomato pulp and sweet chilli sauce. Keep stirring till it forms a coarse sauce. Adjust salt.
  15. Add fresh cilantro, chives, basil, parsley and switch off the gas
  16. Add fish balls and simmer for 2 to 3 min.
  17. Layer garlic Spaghetti in a deep dish and top it with Marinana sauce and fish balls.
  18. Sprinkle chives and cilantro. Serve
