Angoori petha, a delicacy from Agra, is a very sweet and juicy version of the normal pethas.
Take the thicker portion of the winter melon.
Cut them into finger like shapes.
Dissolve 1 tsp of lime stone in 500 ml of milk, soak the melon pieces for atleast 8 hours in it.
Before soaking the melon pieces, make sure that the melon pieces are pricked with fork so that it eases the process of softening the melon.
After 8 hours, wash and strain the melon for about 3- 4 times .
Boil the melon to make soft and drain the hot water . Put the strained melon pieces in cold water immediately so that cooking process stops.
Take sugar with half a cup of water and bring upto boil.
Pour boiled petha into boiling sugar syrup and cook for few minutes.
Now add lemon colour and kewra essence .
Continue to cook for 5 minutes or more , till sugar syrup thickens.
Cover it and let it cool down. Garnish with almond slices before serving.
