Ingredients Serving: 2

  1. For sauce - Large Tomatoes 7 to 8, charred
  2. Garlic cloves - 10 to 12
  3. Olive oil
  4. Tomato puree - 1 tbsp
  5. For decoration : Sliced zucchini, yellow and green - 1 Each
  6. Egg plant ( optional) - 1 small
  7. Corn kernels ( optional) - 1/4 Cup
  8. Seasoning : Oregano
  9. Basil
  10. Garlic flakes
  11. Chilli flakes
  12. Cheese as per your need

Instructions

  1. Grill the zucchini slices on the stove and keep aside.
  2. Sauce : Heat the tomatoes on the stove on open fire. Once they are all charred, remove the skin and chop them.
  3. Heat olive oil, add garlic and add chopped tomatoes. Add salt and pepper according to your taste and then add the tomato puree and any other veggies you wish to add. The sauce should be mushy.
  4. Take a greased baking dish and put the sauce in it. Add grated mozzarella cheese.
  5. Now arrange the zucchini slices, alternating the colors.
  6. Sprinkle seasoning according to your taste. Bake at 180 degrees preheated oven for 10 to 15 minutes.
