ABOUT Jackfruit Garlic Pickle RECIPE

Jackfruit or Kathal is a summer seasonal vegetable in India. Relish the spicy jackfruit pickle that is easy and delicious.

Ingredients Serving: 4

  1. Jackfruit - 500 grams
  2. Garlic - 8 cloves
  3. Salt to taste
  4. Deghi Red Chilli Powder - 1/2 tablespoon
  5. Turmeric - 1/2 tablespoon
  6. Mustard Seeds - 3 tablespoon
  7. Mustard oil - 11/2 cup
  8. Asafoetida - A pinch
  9. Fennel seeds - 2 tablespoon
  10. Fenugreek seeds - 1/2 tablespoon

Instructions

  1. Peel the jackfruit by applying oil in your hands and the knife. Cut into cubes and remove the seeds. Steam the jakfruit cubes and seeds till 3/4 done.
  2. Dry roast fennel and fenugreek seeds and grind it with mustard seeds. Heat oil in a pan and add mustard seeds. Add garlic cloves and fry till golden brown.
  3. Remove the pan from stove and let it become lukewarm. Put all the spices in the oil along with the jackfruit pieces and mix thoroughly.
  4. Put the jackfruit pickle in the glass jar, cover it up with a cloth and keep it in the sunlight for over a week till the pickle is a bit soft.
  5. Serve the pickle with chapatis or with salt crackers.

Wow I did not know you could make pickle out of jack fruit. Very interesting recipe
