ABOUT Mukhalal / Lebanese Shawarma Pickle / Arabic Pickle RECIPE

This pickle is usually served with almost every meal in Arab countries. It is a very popular one and goes well with falafel sandwiches, shawarmas, grilled chicken etc. Pickling this is very easy as well. It stores well up to a month or more in the refrigerator. It can be prepared with a variety of veggies of one's choice like beetroot, cauliflower, cabbage, olives and radish. Tangy and sweet with the crunchy veggies, this pickle is loved by many across the globe.

Ingredients Serving: 5

  1. Cucumber, deseeded and cut into sticks - 2
  2. English cucumber, cut into thick circular pieces - 2
  3. Turnip, cut into sticks- 2
  4. Carrots, cut into sticks - 2
  5. Green long chilies, slit - 7-8
  6. For Brine : Vinegar - 11/2 Cups
  7. Water - 1 Cup
  8. Sugar - 1/4 Cup
  9. Salt - 2 tbsp
  10. Mustard seeds - 1 tsp
  11. Fennel seeds - 1 tsp

Instructions

  1. Collect all the chopped veggies in a large bowl. You can take veggies of your choice and add beetroot, cabbage and cauliflower too.
  2. In a cooking pot add sugar, salt, vinegar,mustard and fennel seeds and water. Bring to a rolling boil.
  3. Pour this on the veggies and cover. Let the mix cool.
  4. Once cool, bottle it and store in the refrigerator. use as desired.
