Ingredients Serving: 4

  1. Mixed veggies cut into small cubes including beans, carrots, corn, and peas
  2. Chopped paneer cubes
  3. 1 cup Lima beans
  4. Green chilies 2-3
  5. Red chilies 3-4
  6. Garlic cloves 2-3
  7. 2-3 cinnamon sticks
  8. 4-5 cardamom pods
  9. 5-6 cloves
  10. 2 Bay leaves
  11. 1 cup curd
  12. Salt to taste
  13. 3-4 spoons ghee or butter
  14. 2 cups Basmati rice
  15. Pinch of saffron
  16. Cilantro 2 bunches
  17. Turmeric powder

Instructions

  1. Cook the 2 cups basmati with 4 cups water with saffron.
  2. This will give a beautiful yellow tinge to rice.
  3. Take a blender and mix all the spices, garlic, chilies, turmeric and blend well.
  4. You can also blend 3-4 spoons of coconut if needed.
  5. This paste has to be smooth.
  6. Take a pan and boil the veggies when the veggies are cooked add the paste that is ground.
  7. Take a pan add butter or ghee sauté sliced onions and paneer.
  8. Sauté some cashews in same ghee. Add the rice at this point, add some cashews in ghee
  9. Add the cilantro leaves.
