ABOUT Sweet Potato Coins RECIPE

Ingredients Serving: 4

  1. 2 tablespoon brown sugar
  2. teaspoon kosher salt
  3. teaspoon ground cumin
  4. teaspoon freshly ground black pepper
  5. 700 grams sweet potatoes scrubbed
  6. 2 tablespoon olive oil
  7. 1 tsp butter

Instructions

  1. Heat the oven (with oven rack in the middle) to 218 degree celsius.
  2. In small bowl, combine the brown sugar, salt, cumin and pepper (12 turns on pepper mill).
  3. Cut the potatoes into ½-inch thick rounds and transfer to a rimmed sheet pan.
  4. Drizzle with the oil, sprinkle with the brown sugar mixture and, using your hands, toss to coat.
  5. Arrange in a single layer without overlapping and roast until the potatoes are tender, 25 to 30 minutes.
  6. Remove, finish with butter and serve with homemade mustard and garlic aioli.
