ABOUT Black currant coffee cake RECIPE

Black currants, once called 'forbidden fruit' in America is one of the healthy berries native to Europe and Asia. It has a unique tart flavor and is rich in polyphenols, dietary fiber and essential nutrients which makes it a good choice of berry to be added to food. I tried this yum coffee cake with dried black currants and brown sugar crumb topping, making it a perfect tea/coffee time accompaniment.

Ingredients Serving: 10

  1. 2 cups all purpose flour
  2. 1 tsp baking powder
  3. 1/2 tsp baking soda
  4. 1/2 tsp salt
  5. 1 cup fresh cream or malai
  6. 1 cup sugar
  7. 2 eggs
  8. 1 cup yogurt
  9. 1 cup dried black currants
  10. 2 tsp vanilla essence
  11. For the crumb topping:
  12. 1/2 cup all purpose flour
  13. 1/3 cup brown sugar
  14. 1/2 tsp cinnamon powder
  15. 4 tbsp cold butter

Instructions

  1. Sieve the flour with baking powder, baking soda and salt then keep aside.
  2. In a pan, mix fresh cream or malai along with sugar. Add in the eggs one by one, then add in the vanilla essence too.
  3. Fold the flour gently into the wet mix alternating with yogurt .
  4. Fold the black currants into the cake batter.
  5. Mix the crumb topping evenly with your hand.
  6. Pour the cake batter in a well greased pan then add the crumb topping.
  7. Bake in a preheated oven at 180 degree C for 40-45 minutes or until a skewer comes out clean.
  8. Serve warm or cold with tea / coffee or any other beverage.
