ABOUT Kerala Chicken Roast RECIPE

A recipe famous in Kerala and found in many sites. This is just one of the adaptations. I will not take credit for the recipe.

Ingredients Serving: 4

  1. THE MARINATE
  2. Chicken 500gms
  3. Curd 4tbsp
  4. Chilly powder 2tbsp
  5. Turmeric powder 1/4tsp
  6. Salt to taste
  7. THE MASALA
  8. Mustard seeds 1tsp
  9. Cumin seeds 1/2tsp
  10. Fennel Seeds (saunf) 1tsp
  11. Onions 4 Nos. (long chopped)b
  12. Green Chilli 4 Nos. (Slit lengthwise)
  13. Ginger 2 inch
  14. Garlic 4 Cloves
  15. coriander powder 1tsp
  16. Cardamon 2 Nos. peeled
  17. Cinammon 1inch
  18. Cloves 2 nos.
  19. Chicken Masala (Everest, Nirapara or any)
  20. A non stick pan with lid (for closed cooking only)

Instructions

  1. THE MARINATE
  2. Mix the chicken pieces with curd, turmeric, chilly powder and salt and coat nicely. Store for 45 mins or refrigerate overnight for best results
  3. In the non stick pan, heat oil. Make sure to use plenty of oil for the onions cut above to be roasted nicely. (This is the main reason for taste)
  4. Splutter mustard, cumin and fennel seeds together until they 'pop-pop'
  5. Add Onions and Green Chillies and saute till the onions are slightly dark brown (not burnt)
  6. Crush cardamon, cinnamon and cloves to a coarse powder and mix with above for 30 seconds
  7. Crush ginger and garlic into a paste and mix with above for 30 seconds
  8. Add coriander powder and mix well for 2 minutes till the fragrance is felt
  9. THE FINALE
  10. Add the MARINATED chicken to the MASALA and stir for around 30 minutes. If the chicken is not cooked, you can close lid and cook for sometime till chicken becomes tender.
  11. Roast the chicken in the masala till the texture becomes thick and required consistency is obtained
