Ingredients Serving: 6

  1. Wheat flour 1 cup (150 grams)
  2. Plain flour (maida) 1 cup (150 grams)
  3. Clarified butter (ghee) 5-6 tablespoons
  4. Carom seeds 1 teaspoon
  5. Malvani masala 1 tablespoons (can adjust according to your taste)
  6. Red chilli powder 1/2 teaspoon or as hot you like
  7. Asafoetida (hing) a pinch
  8. salt as per taste
  9. Luke warm water to knead the dough as required

Instructions

  1. In a deep bowl/plate mix all dry ingredients
  2. Add hot ghee for moyan
  3. Mix well. mixture should look crumbly
  4. Add water little by little and make neither soft nor very hard dough.
  5. Keep dough covered and rest it for 15 minutes
  6. Now take a medium size ball and roll it like chapati dusting some maida
  7. Prick it with fork and cut into desired shape
  8. Heat oil in a wok. Fry these matharis on low-medium heat till crisp and golden brown.
  9. Take out on tissue paper and let it cool completely.
  10. Serve
