ABOUT Peanuts And Fennel Sardai RECIPE

Sardai is a traditional drink made especially in Holi and Mahashivratri festival in Northern parts of India. Sardai is also known as Thandai.This drink is mainly made with milk and other ingredients which are added is optional.I made it with few groundnut in place of dry fruits and it came out very tasty

Ingredients Serving: 4

  1. 5 cups full fat milk
  2. 3/4 cup roasted peanuts
  3. 2 tsp magaz ke beej
  4. 1/2 cup whole sugar(Misri)
  5. 1 tsp Fennel seeds
  6. 1/2 tsp White pepper powder
  7. 1/2 green cardamom powder
  8. Few saffron strands for garnish

Instructions

  1. Take peanuts,fennel and magaz ke beej and make fine powder or paste of it.
  2. Now in other pan boil milk till it starts boiling. Keep boiling in medium flame till thick. Switch off the gas. Cool.
  3. In other pan take 1 cup of milk and add peanuts, magaz and fennel paste in it and cook it with milk for 10-12 min and keep aside to cool.
  4. Add milk and groundnut paste, and add cardamom powder and white pepper powder to it and mix well
  5. Now with strainer strain it and keep it in the fridge for at least 2 hours to chill.
  6. When chilled pour in a glass and sprinkle some cardamom powder, some pistachio powder and few saffron strands over it.
