Kesar sandesh ( shondaesh ) is Bengali sweet made from paneer (Chenna).

Bring milk to a boil .
Once it starts boiling add lemon juice to it and milk will start curdling.
When the milk curdles and whey separates, switch off the gas and drain it through a strainer .
Take chenna in a muslin cloth. Tie from the top and hang for two hours.
Refrigerate the chenna in the cloth for 1 hour.
Take out paneer from refrigerator and knead it well with hands for about 10 mins , till it becomes soft.
Add powdered sugar , saffron strands and cardamom powder and mix it well.
Heat kadai add this mixture to kadai , cook on very low flame for 5 minutes. Stir while cooking
cool it to room temperature.
You can make sandesh in any shape
I shaped sandesh like a peda and pressed with the back of a cupcake mould to get a pattern.
Kesar sandesh is ready. Serve
