ABOUT #Roomali roti RECIPE

Paper thin chapatis made up of wheat flour served with dal makhani and rich gravies. Traditionally made by rolling in air but to kitchen queen rescue this is a convenient way to delight their families.

Ingredients Serving: 8

  1. All purpose flour 1 cup
  2. Salt 1/4 tesp
  3. Oil 1 tbsp+ 1/4 cup
  4. Milk 1/4 cup
  5. Water as needed
  6. Ghee for brushing

Instructions

  1. Mix flour, salt and 1 tbsp oil well.
  2. Add milk and knead into a soft dough using water as needed.
  3. Let the dough rest for half an hour.
  4. Pinch a ball from the dough for one chapati.
  5. Divide it into two and make two balls.
  6. Roll both balls into small disc say 4" diameter.
  7. Apply oil allover one disc generously.
  8. Cover with other disc.
  9. Now stretch them together using rolling pin, as thin as possible.( approx 10-11 inches diameter).
  10. Keep the griddle very hot.
  11. Flip this thinly rolled chapati on hot griddle.
  12. Flip after 15 seconds.
  13. Cook this side too for 15 seconds and remove from the griddle.
  14. Detach both layers. If oiled well they will depart very easily.
  15. Keep them covered in kitchen towel.
  16. Prepare all chapatis same way.
  17. When all done put them again on hot griddle one by one.
  18. Place one chapati on hot griddle raw side down. Rub with a spoon dipped in ghee and remove within 5 seconds from griddle. Give two folds and put in chapati box in kitchen napkeen. Prepare all same way.
  19. Serve with dal makhani and rich gravies.
