Ingredients Serving: 5

  1. Full cream milk or Cows milk - 1litre
  2. 1/4 cup Curd
  3. 3 to 4 tbsp powdered sugar
  4. Corn flour - 1tsp
  5. pink food colour -3 drops
  6. 3 to 4 big fresh coconut pieces
  7. 2 tbsp water

Instructions

  1. Boil milk. Dilute curd with 2 tbsp of water, add it to the boiling milk and keep stirring till the milk curdles fully. Strain the chenna/paneer in a muslin cloth ( I use soft cotton handkerchief or very soft dupatta). Hang it for 1/2 hr .
  2. All the water should be drained out. But the chenna should be moist and not totally dry.
  3. Grind this chenna with powdered sugar and corn flour in a grinder or smoothie maker until smooth.
  4. Add drops of colour at this time .Take a non-stick pan and heat this mixture continuously for 6 to 7 minutes on a very low flame.
  5. When the mixture starts leaving the sides of the pan and becomes a homogenous and dry mixture take it off the gas.
  6. Knead the mixture very well till it looks smooth and without any cracks.
  7. Make it into desired shapes. Either make the shapes by hand or through moulds.
  8. Take big pieces of fresh coconut. Now take the fondant cutters ( flower /heart or any other shape) and cut various shapes with them.
  9. Decorate the sandesh with fresh coconut flowers.
  10. keep them refrigerated till serving time.
