ABOUT Steamed Dried Figs pudding with Vanilla Custard RECIPE

This recipe is inspired from the book "The Love of Cooking" by Sonia Allison. This book is so good and it was released in 1972. It consists of all basic concepts and many recipes. I referred steamed dates pudding and substituted dates with dried figs. Custard requires patience but pudding is simple.

Ingredients Serving: 4

  1. For the steamed figs pudding:
  2. Self raising flour -150gram
  3. Soft unsalted butter -75gram
  4. Dried figs-chopped -50gram
  5. Brown sugar-75 gram
  6. Cold milk -5 to 6 tablespoons
  7. Egg beaten-1
  8. For the vanilla custard:
  9. Eggs -2 plus one egg yolk
  10. Brown sugar -1 tablespoon
  11. Milk -250ml
  12. Vanilla essence-1/2 teaspoon

Instructions

  1. Prepare the custard first.
  2. Add the two eggs and the egg yolk in a bowl. Add in the sugar.
  3. Place the bowl on top of another bowl with gentle simmering water so as to resemble a double boiler.
  4. Bring milk to just a boil, that is bubbles should just start to appear.
  5. Immediately add the milk to the egg mixture and mix well.
  6. Keep on stirring continuously for about 20 minutes so that the custard reaches a fairly thick consistency to coat the back of a spoon.
  7. The important thing is that the water in the lower bowl should never boil it should only be a gentle simmer, otherwise the custard will curdle.
  8. Once the custard reaches the correct consistency, immediately pour it into a cold bowl, add the vanilla essence and salt.
  9. For the pudding, first sift the flour into a wide bowl.
  10. Add the butter and rub with the tip of your fingers.
  11. Then add the sugar and chopped dried figs. Mix well.
  12. Add the egg and milk and stir briskly without beating.
  13. Grease ramekins or any small silicon moulds,fill the pudding mix upto 3/4 of the moulds and steam for 15 to 20 minutes,till they are cooked and firm.
  14. Unmould to a plate and serve with the custard.
