ABOUT Pasta shells with garlic, coriander, mint butter RECIPE

This recipe is inspired from Nigella Lawsons "Pasta Snails with garlic butter" recipe from Simply Nigella cookbook. I just substituted parsley with coriander and mint. If you are looking for a simple pasta recipe that can be whipped up within 15 minutes,this is the one to go. Simple and comforting.

Ingredients Serving: 2

  1. Shell type pasta/macaroni- 150gram
  2. Soft unsalted butter-50gram
  3. Finely chopped coriander and mint leaves-1 cup
  4. Garlic -4 to 5 big cloves- finely chopped or grated
  5. Salt - to cook the pasta plus a pinch for sauce
  6. Water - to cook the pasta

Instructions

  1. Cook the pasta in half litre of boiling water with salt for seven minutes or till aldente, that is well cooked but still with a bite.
  2. Drain the pasta,but reserve some of the pasta cooked water. Wash the pasta immediately with running cold water and set aside.
  3. In a saucepan, melt butter in low heat.
  4. Add the garlic with a pinch of salt and saute for a minute,taking care not to burn the garlic.
  5. Add the chopped coriander and mint leaves and saute for another minute.
  6. Add the cooked pasta, mix well and add a tablespoon of the pasta cooked water and mix well.
  7. Add another tablespoon of the pasta cooked water and mix well so as the sauce coats the pasta well.
  8. Switch off and serve hot!
