Yummy and attractive cake made especially for my kids.

Ingredients Serving: 2

  1. 1 cup all purpose flour
  2. 1/2 cup milk
  3. 2 tablespoons confectioner's sugar
  4. 1/2 cup salted butter
  5. 2 teaspoon baking powder
  6. For center filling-
  7. Few strawberries sliced
  8. 2 tablespoons jam of your choice
  9. For topping-
  10. Half cup whipped cream
  11. Sliced strawberries
  12. For face-
  13. 2 whole strawberry
  14. 4 gems for eyes
  15. Small piece of any green fruit for tongue

Instructions

  1. Heat the oven to 200 degrees C. Sift together the flour, sugar, baking powder and salt into a large mixing bowl. Cut in the butter with fingertips. Once the dough is crumbly, slowly add the milk.
  2. Turn out the dough onto a floured working surface and gently roll the dough into a 1-inch-thick rectangle. Handle the dough as lightly as possible.
  3. Slice the rectangle into 2 strips. Place the strips on baking tray lined with butter paper and curve them into S shapes that resemble snakes. Bake for 15-20 minutes until the bottoms are golden brown. Transfer the baked shortcakes to wire rack and let cool. Carefully slice the cooled shortcakes in half lengthwise .
  4. Combine the whipping cream and confectioner's sugar in a chilled bowl and beat with an electric mixer until stiff peaks are formed.
  5. Spread jam and arrange strawberries in the middle half then cover with the shortcake top. Spread on whipped cream and add a layer of sliced strawberries.
  6. For the snakes heads, cut mouth openings. Place the whole berries and place one at the end of each shortcake. Press a pair of gems for eyes and add a forked tongue cut from green fruit.
